Ingredients
- Quiche Lorraine
- For pastry
- 250g flour
- 150g cold butter
- 1 egg
- 1 tablespoon cold milk
- Pinch of salt
- For filling
- 4-5 rashers of bacon
- 1 onion sliced or diced
- 100g grated cheese of choice
- 2 small tomato’s sliced
- 5 eggs
- 500ml of cream
- Salt and pepper to taste
Instructions
- First make pastry. If you have a mixer add flour salt and butter an whizz till butter is incorporated (it looks like fine bread crumbs)if you don’t have a mixer you will have to do this buy hand.
- Then add your egg and milk to bring it all together into a ball,do not knead it
- Take out of mixer and put it in the fridge for 10 mins.
- Roll out your pastry on a floured surface moving 1/2 way around after every few rolls.
- When the pastry is rolled to about 1/4 cm Put into your tin and pressing the sides, put int here fridge again for 10 mins while the oven is heating.
- When oven is hot (180c) make fork marks on the base of your pastry the add grease proof paper and baking beans to weigh down. Place in the oven to cook for about 10-15 minutes then take out beans and pater and bake for another 5 minutes.
- While this is in the oven slice your onion and bacon and fry together in a pan with a little olive oil. Just till onion is soft and bacon cooked through.
- Make your egg mixture by beating eggs together with salt and pepper and cream. Now slice your tomatoes too and grate or crumble your cheese.
- Once the base is cooked take out of the oven and add your bacon mix cheese and tomatoes. Pour over your egg mixture and give it a little shake or wobble to make sure the egg settles to the bottom of the tart.
- Bake again in the oven till the tart is set and golden on top.
- Take out of the oven and set aside for 10 mins before serving with a nice mixed salad
Notes
- Try making with different things like roasted vegetables or pumpkin also try different cheeses, have some fun making it your own.

Ingredients
- Currants. I'lb. 450 grams
- Sultanas. I'lb. 450 grams
- Raisins . 10 ozs. 275 grams
- Mixed Peel. 4 ozs. 100 grams
- Ground Almonds 3 ozs 75 grams
- Glacé Cherries. 6 ozs. 175 grams
- Lemon Peel grated of 1 and a half Lemons.
- Orange Peel grated of 1 Orange.
- Butter. 10 ozs. 275 grams.
- Soft Dark Brown Sugar. 10 ozs 275 grams.
- Eggs. 5.
- Brandy 4 tablespoons.
- Black Treacle. 1 and a half tablespoons.
- S.R. Flour. 3 ozs. 75 grams.
- Plain Flour 8 ozs 225 grams.
- Ground Cinnamon. 1 teaspoon.
- Mixed Spice. Three quarters of a teaspoon.
- Ground Nutmeg pinch
Instructions
- Place all the dried fruit mixed Peel in a Bowl together with the Ground Almond.
- Wash and dry the Cherries then add these together with the citrus Peel with the fruit.
- In another( large) bowl cream together the Butter Sugar and Treacle until light and fluffy.
- Sift the flours with the Spices.
- Beat the Eggs one at a time into the creamed mixture adding 2 tablespoons of flour alternately with the Brandy.
- Mix in the dried Fruit mixture.
- Give a good stir and make a Wish!
- Spread into the Tin for baking.
- In the Oven on 150 C for 3 Hours.
- Your Cake Tin should be double lined inside and 3 layers of Brown Paper tied round the Outside. Important this!
- Bake in the middle of the Oven for 3 Hours.
- I alway's check the cake after two and a half hours, not all ovens are the same, stick a wooden pin in the cake, if it comes out clean Done.
- Just so you know I don't sift my flours, just me being lazy!
Notes
- Well it's that time of year again when we need to start thinking about baking our Christmas cakes so I asked someone with lots of experience for help. Every year my Mor-Mor (Grandmother) bake Christmas cakes for the family. This year I think she has made 3 normal and 1 gluten free one for various family members. They are always made with love and with a wish stirred in!
- If you like the cake extra moist feed it with brandy every now and then before the big day. (if you don't like alcohol replace it in the recipe with orange juice)
- You can decorate it anyway you choose, I like it the traditional way with marzipan and royal icing. I will post some recipes for them soon .
- I think it is a great thing to be able to share family recipes and I'm very honoured and proud to share this one with you all. With big thanks to my Mor-Mor! The rest of what you read is her writing.

Ingredients
- 5 eggs separated
- 250g of dark chocolate
- 250g butter
- 250g light brown fine sugar
Instructions
- First of all melt the butter and chocolate in a bowl over simmering water. If you are brave you can do it in the microwave but make sure you check it a give it a stir every 30 seconds until melted.
- Then whisk your egg whites till stiff and and gradually add in half the sugar one spoon at a time whisking 20 seconds with every addition. Once this is done whisk up your egg yolks with the remaining sugars until light and fluffy.
- When your eggs are whipped add the chocolate mixture is cooled mix it into the yolks then fold in the whites with a metal spoon till all is evenly mixed.
- Place it in a buttered cake tin with a removable base and bake in a fan oven at 160c for about 50mins. Test with a tooth pick to see if it is cooked , if pick comes out clean your done!
- The cake will fall in the center don't panic this is what should happen. Cool the cake in the tin. Remove once cool and decorate with a drizzle of melted chocolate and some fruit or just dust with cocoa and a bit of icing sugar

Salmon tartare

Ingredients
- 250g fresh salmon fillet (sushi grade, without skin)
- Fruity, high-quality olive oil
- 1 Finely diced shallot or 2 spring onions
- 1 lime or lemon
- 1 Ripe avocado
- Coarse sea salt
- Freshly ground black pepper
- Serve on thin, toasted slices of baguette, bread
- 1 kind or chopped fresh herbs (cilantro, chives, dill)
- 1 Cucumber
- Salmon eggs to decorate
Instructions
- For easier slicing, put the salmon in the freezer for 15 to 20 minutes.
- Cut the salmon into three evenly thick pieces (horizontally), then into thin stripes and lastly into small cubes.
- The more attention you pay to this step, the nicer the tartare will look in the end.
- Put into a larger bowl. Drizzle generously with very good olive oil and stir until the fish is evenly covered and looks smooth and shiny, then add the diced shallot, the sea salt and the black pepper.
- Wash the lime under hot water and pat dry before grating its zest over the tartare. Mix well, season to taste, cover with foil and return to the fridge.
- Keep the lime for later (you’ll be needing some juice).
- Cut the baguette into thin slices. Heat the grill then distribute the slices evenly and drizzle with a little olive oil. Toast shortly from both sides until golden brown and crisp.
- At the last minute, cut your avocado mix into your salmon very gently so it does not smosh up!
- Top the little bread slices with the marinated salmon cubes and drizzle with some juice from the reserved lime (if you add it earlier the fish will lose its shiny color and turn opaque).
- Decorate with some fresh herbs, if at hand.
- If you are serving these on a plate as a starter you can slice your cucumber very finely and place on the bottom for your plate for extra colour.

Ingredients
- 1-2 cloves garlic
- 1 small chilli deseeded
- 2 spring onions roughly chopped
- small bunch Italian parsley roughly chopped
- 1 packet frozen sweet corn
- 1 tsp coriander powder
- 1 tsp fresh grated ginger
- 3 eggs
- 2 heaped tablespoons flour
- Salt and pepper
- Oil for frying
Instructions
- In a blender put your 1/2 your sweetcorn, all the garlic, chilli and ginger blend till chopped but not smooth then add remaining ingredients except the flour and leftover corn and blend again, put this mixture into a bowl and stir in remaining sweetcorn and the flour.
- Heat a few tablespoons of oil in a pan and spoon in the mixture 1 tablespoon at a time.
- When the mixture begins to set on the top turn and fry the other side.
- Serve with a wedge of lime and sweet chilli sauce.
- You could also top with a prawn or some salmon.

Ingredients
- Frozen ready rolled puff pastry
- 2 onions sliced
- 1 tablespoon sugar
- Salt and pepper
- Cheese of your choice(It’s great with blue cheese but whatever is left over in the fridge will do nicely!)
- Fresh thyme or rosemary - chopped
Instructions
- Take the puff pastry out of the freezer and while still very cold cut it into squares and lay them on a greased baking tray about 2-3 cm apart.
- In a pan fry your onions slowly so they caramelize but do not get burnt.
- When they have been cooking 10-15 mins add your sugar and salt and pepper continue about another 15 mins on a low heat till they are golden, set aside.
- Turn on your oven to 200c.
- Grate your cheese or crumble depending on what type of cheese it is.
- Now you're ready to assemble, to each square add a little onion and top with cheese, place in hot oven till pastry is cooked and puffed up nicely.
- Sprinkle with your fresh herd and serve while warm.

Ingredients
- 60g rice vermicelli or rice noodles
- 8 rice paper wrappers
- 8 large cooked prawns, peeled, deveined and cut in half
- 1 1/3 tablespoons chopped fresh Thai basil
- 3 tablespoons chopped fresh mint leaves
- 3 tablespoons chopped fresh coriander leaves
- 2 lettuce leaves, chopped
Sauce
- 2 tablespoon fish sauce
- 3 tablespoons fresh lime juice
- 1 clove garlic, finely chopped
- 1 fresh chili padi chopped(deseeded if you like)
- 2 tablespoons caster sugar
Other sauce
- 3 tablespoons hoisin sauce
- 1 teaspoon finely chopped roasted peanuts
Instructions
- Bring a medium saucepan of water to the boil. Boil rice noodles for 3 to 5 minutes, or until al dente, and drain.
- Rinse thoroughly with cold water so they don't stick together.
- Fill a large shallow bowl with warm water.
- Dip one wrapper into the water for 1 second to soften.
- Lay wrapper on the bench and place 2 prawn halves, a handful of noodles, basil, mint, coriander and lettuce in a row across the centre, leaving about 5cm of the wrapper uncovered on each side.
- Fold in uncovered sides of wrapper, then tightly roll to enclose the filling.
- Repeat with remaining rolls.
- In a small bowl, mix the fish sauce, lime juice, garlic, sugar and chilli.
- In another small bowl, mix the hoisin sauce and peanuts.
- Serve the rice paper rolls with the fish sauce and hoisin-peanut dipping sauces.

Ingredients
- Ready made mini sweet pastry cases
- 1 jar ready made lemon or orange curd
- 1 pot whipping cream
Instructions
- Half the cream in a bowl and whip it up then fold in your lemon/ orange curd.
- Fill a piping bag or ziploc with the filling and pipe into pastry cases.
- You can top these with fresh berries or whip up.

Ingredients
- Ready made mini sweet pastry cases
- 1 Can condensed milk
- 2 Bananas
- 1 pot whipping cream
Instructions
- Boil the tin of condensed milk unopened in a pot making sure that it stays covered with water for 2 hours!
- Once cooled down open and put contents into a piping bag.
- If you don’t have a piping bag put in a ziplock bag and cut off the corner.
- Pipe in enough filling to half fill each case then top with a few slices of banana.
- Whip up your cream and top each one then shave on a bit of dark chocolate on each one to make it look nice!

Ingredients
- 10 slices pancetta or prosciutto
- 20 whole raw prawns, peeled but tails left on
- 2 tbsp extra virgin olive oil
Dip
- 1 tbsp finely chopped preserved lemons or grated zest of 1 lemon
- 1 tbsp lemon juice
- 1 tbsp finely snipped chives
- 4 tbsp mayonnaise
Instructions
- Soak 20 short bamboo skewers in water to prevent them burning under the grill.
- To make the dip, combine the preserved lemon or lemon zest, lemon juice, chives and mayonnaise and refrigerate.
- Heat the grill to high.
- Cut the pancetta or prosciutto - probably in half, although sizes of slices differ - so that it wraps around the middle of the prawn, still showing some of the prawn at either end.
- Thread each prawn onto a skewer and lay on a baking sheet with a rim.
- Mix the olive oil with sea salt and freshly ground pepper in a bowl and brush the prawns with the seasoned oil.
- Grill for 3-4 minutes on one side until the pancetta is crisp, then turn and grill for a minute or two more until cooked through.
- Serve hot or warm with the lemon mayonnaise for dipping.
